Grilled Pork Liempo


Liempo, or pork belly, is a popular dish in many Asian countries, including the Philippines. Here is a simple and delicious recipe for grilled liempo that you can try:

Ingredients:

1 kilo pork belly (liempo)

1/4 cup soy sauce

1/4 cup calamansi juice (or lemon or lime juice)

1/4 cup brown sugar

2 cloves garlic, minced

1 tsp black pepper

1 tsp salt

Instructions:

1 In a mixing bowl, combine soy sauce, calamansi juice, brown sugar, garlic, black pepper, and salt. Mix well until the sugar is dissolved.

2 Place the pork belly in a large resealable bag and pour in the marinade. Massage the bag to make sure the pork is well-coated with the marinade. Marinate in the refrigerator for at least 3 hours, or overnight for best results.

3 Preheat your grill to medium-high heat. Remove the pork from the marinade and pat dry with paper towels.

4 Grill the pork belly over direct heat, skin side down, for 5-7 minutes or until the skin is crispy and golden brown. Flip the pork over and grill for another 5-7 minutes or until the meat is cooked through.

5 Let the pork rest for a few minutes before slicing it into bite-sized pieces. Serve with steamed rice and your favorite dipping sauce.
